Penne with Tomato and Olives

Ingredients
500g penne pasta
1/4 cup olive oil
2 garlic cloves, thinly sliced
2 cups cherry tomatoes, halved or quartered depending on size
1 tsp dried oregano
1/4 tsp chilli flakes (optional)
2 tbsp tomato paste
1/4 cup Northside Fine Foods Pitted Kalamata Olives, sliced
1/4 cup fresh parsley, chopped
1/4 cup Northside Fine Foods Italian Grated Parmesan, plus more for serving
Method
1. Bring a large pot of salted water to the boil and cook the penne until al dente then drain once cooked
2. Whilst the water is boiling and the pasta is cooking, in a large pan, heat the olive oil on medium heat and add the garlic stirring constantly to ensure it doesn't burn
3. Add the cherry tomatoes, oregano, chilli flakes with a pinch of salt and pepper and reduce the heat to low
4. Continue to cook and stir for about 1-2 minutes and then add the tomato paste. Cook for a further 2-3 minutes
5. Finally, add the cooked penne, olives, parsley and Parmesan to the pan and combine ensuring the pasta is all coated
6. Serve with more Parmesan if desired
